I would like a vibration sensor that could be hooked up to an Arduino board and sit somewhere on my daughter's crib mattress to track at what times (and possibly for how long) she moves around at night.

In my experience piezo sensors are very noisy, these sensors will pick up very subtle vibrations, probably even breathing. You could spend some time trying to filter out all the noise by a combination of hardware and software.

The spring sensor seems much less prone to noise, although it will not be able to differentiate subtle movements (moving her hand) from more significant ones (eg. sitting down). This sensor would allow you to know for how long she was moving as it won't switch off until the movement stops.

This could give you a nice time series if you time-stamp the value of the sensor at fixed intervals or you could have it trigger when it detects motion and record for how long it was on.
